Earl Grey Tea Cookies (makes 6 dozen)
2 c. all purpose flour
1/2 c. granulated sugar
2 T. Earl Grey tea leaves (or two tea bags)
1/2 t. salt
1 t. pure vanilla extract
1 c. unsalted butter, cut into pieces
Heat oven to 375 degrees.Â Pulse together all the dry ingredients in a food processor until the tea leaves are pulverized.Â Add the vanilla, 1 t. water, and the butter.Â Pulse together until a dough is formed.Â Divide the dough in half.Â Place each half on a sheet of plastic wrap and roll into a 12 inch log, about 2 inches in diameter.Â Wrap and chill for 30 minutes.Â Slice each log into discs, 1/3 inch thick.Â Place on parchment or foil-lined baking sheets, 2 inches apart.Â Bake until the edges are just brown, about 12 minutes.Â Let cool on sheets for 5 minutes, then transfer to wire rack.Â Enjoy!
